Cup of Darjeeling First Flush Tea

This photo shows Darjeeling tea, first flush 2007, Risheehat Estate, SFTGFOP1 CH/FL.

Technically, this is a "black tea", but the color is exceptionally light, lighter even than some green teas. This is common and typical among first flush Darjeeling teas, due to a "hard wither" during the production process, which quickly dries out the leaves and stops the oxidation process, much like the oxidation is halted by heating during green tea production. The result is similar: a lighter-colored leaf and brewed cup, but the flavor profile is unique.
