Naturally very sweet. The roast is mellow and does not seem to impart any bitterness or burnt qualities. A creamy, vanilla-like quality is dominant in the aroma. A hint of smokiness is present, especially in the aftertaste. The flavor and aroma of this drink are very pleasant and complex.
I have tried brewing this one in different ways. It's surprisingly flavorful if you brew it much more weakly than recommended--1 minute infusion with boiling water, about half a teaspoon per cup yields a flavorful cup. It's a little stronger if you brew 8 minutes as recommended, but not hugely so. Brewing longer seems to bring out more of the roast qualities, but no more of the pleasant tones. It also leaves a dry astringency in the aftertaste. I prefer the brief brewing. This tea is actually quite good for multiple infusions if you make very brief infusions too.
Like Upton's green Yerba mate, I find this offers exceptional value as the leaf goes very far. But it's not organic, and I've seen decent quality mate for sale at a lower price, that is organic and produced with an eye towards sustainability. Upton needs to get on that one!
