One of the all-time best iced teas I've ever had. Hot summer day Paris 2018... marching around the Louvre we stumbled upon Mariage Freres tea shop in the underground gallery. Unfamiliar with what to choose and overwhelmed by the immense selection, the server asked what flavor profiles I liked. I said, "I like earl grey, and I like mint". He came back with a BIG glass full of iced Casablanca tea (green tea, with bergamot and mint) and a small container of simple syrup. Best... Iced... Tea... Ever!!! I ordered a second glass (as my kids helped me evaporate the first glass). We've been buying Casablanca loose by the pound ever since. We make two pitchers at a time using #4 T-Sacs. Follow the directions: 2.5g/20cl at 203F for 3 min. Perfect every time.
