Brewing Instructions: (from Shanti Tea)
Oolong teas are best enjoyed when the leaves are briefly infused with hot water which is then poured off. The tea is then re-infused to drink. Bring water to a rolling boil. Use 1 tsp. per 8 oz cup. Pour boiling water over leaves, steep for 20 seconds, then discard water and re-steep. Steep for 1 - 2 minutes, then serve. May be re-infused several times.
