About Aiya

Aiya is a Japanese tea company. The company was founded in 1888 and based in Nishio, Japan; it originally started out as a local shop for tea and dyes. The name originates as a shortening of the name Aidama, an indigo dye used at the time; the shortened form eventually became the company's official name.

The company has always focused on Japanese green teas. It originally focused on gyokuro, but shifted to focus more on matcha, for which it has become been best-known. In addition to matcha, the company sells a variety of other teas, both loose-leaf and in pyramid sachets. Aiya is sold both wholesale, and directly to customers through the company's website.

The company's matcha is produced mostly in the Nishio region of Aichi prefecture. The company also uses organic matcha produced in Kagoshima and the area around Toyota in Aichi.

Matcha Infused Genmaicha

Style: Genmaicha – Region: Japan
Feb. 13th, 2013

Straight out of the bag, this tea had a strong matcha smell, very grassy in a fresh and invigorating way.

I didn't have a lot of tea to play with - I had only a small sample, and thanks to a spill I had an even smaller sample than usual - so I brewed it as close to the recommended instructions as possible - 194 F f...

Premium Gyokuro

Style: Gyokuro – Region: Japan

As a matter of preference, I should say that my 'ideal' Gyokuro tastes strongly umami, a bit sweet, and grassy/vegetal on the finish. I was able to get Aiya's Gyukuro to display something like this flavor profile - along with a pleasantly sharp, matcha-like aroma - when I brewed a relatively heaping teaspoon of it for ...

Matcha Infused Sencha

Style: Sencha – Region: Japan
Feb. 8th, 2013

I played around with the brewing times on this one a bit, and find that I like it best a little 'overbrewed'. The website says to steep it at 176F for about a minute and a half, but that made it come out a little bland by my standards. Doubling the time to three minutes produced a bracing, umami type flavor I really li...

Matcha Infused Sencha

Style: Sencha – Region: Japan
Dec. 12th, 2012

This is a totally different beast, in my opinion, from the matcha-infused Genmaicha from the same company, and was surprisingly different from their premium sencha as well.

Rich, nutty aroma, almost grainy or oatmeal-like. Somewhat dusty finish, but with a hint of floral tones like I have encountered in some pan-fi...

Matcha Infused Genmaicha

Style: Genmaicha – Region: Japan
Dec. 11th, 2012

The presence of the matcha is boldly evident looking at the dry leaf, but upon brewing, this tea seemed pretty similar to other genmaicha--perhaps a tiny bit more cloudy, but similar flavor and aroma.

Pleasingly nutty and toasty aroma, with a hint of vegetal tones. Flavor is smooth and overall character is mellow.
